Students will have the opportunity to complete a stand-alone Culinary Skills course in First Year. This module aims to develop our students’ ability to plan and prepare a series of nutritious home-cooked meals, using fresh ingredients and helps them understand how to cook economically.
During the 11-week course, students will work safely and hygienically with a range of tools and equipment available in a kitchen. Students will consider the nutritional requirements for growth and activity at different stages of life. They will learn how to analyse nutritional information provided in advertising and product labels, and to make decisions about how this information can be used by, or influence, individuals in their food choices.
The module places a strong emphasis on developing a variety of practical skills. Students work together in groups, designing and modifying recipes to produce a variety of dishes that use fresh seasonal ingredients.
